Ask the Butcher with Dan Klink - Chicken Tikka Masala250g plain yoghurt
1 tin coconut cream
2 Tbs jalapeno
2 Tbs paprika
1 Tbs cumin seeds
1 Tbs minced garlic
1 Tbs minced ginger
Juice of 2 lemons
1 tsp all spice
1 tsp cayenne pepper
1 tsp cinnamon
1 whole chicken cut into 8
2 green capsicums
1 brown onion
1. Combine all ingredients in a large bowl and mix well.
2. Add chicken, cover and put in to the fridge to marinade for a minimum of 3 hours – overnight is best.
3. Put chicken and all the marinade into a roasting dish and bake for 1hr 40mins.
4. Serve on rice.
